Potato wedges with an oriental flavor

WHAT YOU NEED
  • 5 or 6 small potatoes
  • 1/2 cup of olive oil
  • A pinch of ground coriander, black pepper and paprika
  • Salt

Preparing and baking the potato wedges:

Wash well the potatoes but don't peel them.
Cut them in V-shaped slices i.e. cut oblique on the wider side in a manner to obtain slices that are thicker on one side. Put them in a baking tray and add the spices as follows:
  • 2 coffee spoons of dried and ground coriander
  • 1/2 coffee spoon of ground paprika
  • 1/2 coffee spoon of ground black or white pepper
Add the olive oil while making sure to wet all slices.
Put the tray in a preheated oven to 230 degrees (or to the max, potatoes do not require such an accurate temperature setting) and bake them until you can easily introduce a fork in the slices with denotes they are done. This usually requires 30 minutes.
It is important however to remove the baking tray after some 10-15 minutes, stir the potato slices for redistributing the spices and then continue baking until soft.
