Oven baked frog legs with coriander and garlic

This dish is part of the famous Lebanese Meze (Meza, Mezza, Mezze)
WHAT YOU NEED
  • 1 Kg of frog legs
  • 5 garlic cloves
  • 1 bunch of green coriander
  • ​Lemon juice (1 lemon)
  • 1/4 cup of corn oil
  • ​salt, pepper

Preparing the cooking sauce of the coriander-garlic frog legs

  1. Crush the garlic with salt then add the lemon juice and one tea spoon of corn oil and pepper to taste.
  2. Add a little chopped green coriander
  3. Put the mix in a small blender and blend all ingredients until obtaining a creamy white sauce
  4. Chop the coriander bunch and keep aside

Baking the frog legs in oven

  1. Put the frog legs in a Pyrex baking tray
  2. Add the oil
  3. Preheat your oven at 220 degrees Celsius and bake the frog legs for 10 minutes
  4. Add the sauce and half of the coriander, mix well and continue baking until the liquid evaporates
  5. Now shift to the upper gas burner and roast the frog legs until golden brown while stirring from time to time.
  6. Add the remaining coriander and bake for the last 5 minutes.
